I credit these banana bread pancakes with getting us through the worst snowstorm Tennessee has seen in over a decade. We woke up to frozen pipes and no running water, so these pancakes were the perfect pick for an emergency winter breakfast.
Ingredients:
3 ripe bananas
2 large eggs
1½ cup milk of your choice
2 cups flour
¼ cup brown sugar
2 tsp cinnamon
1 tsp vanilla
2 tsp baking powder
1 tsp salt
1/4 cup chopped pecans (or nut of your choice)
Butter or oil
Directions:
In a mixing bowl, mash bananas until smooth. Add milk, eggs, and vanilla. Stir until combined.
Stir in flour, brown sugar, cinnamon, baking powder, salt
and pecans. Mix until no clumps remain.
Heat butter or oil in frying pan.
Pour 1/4 cup of batter into individual pancake rounds.
When bubbles begin to form on surface, flip pancake and cook through.
Enjoy with your choice of toppings.
